Summer Salmon Crudo

Preparation
In a small bowl combine olive oil, juice of half a lime, and a sprinkle of salt.
Thinly slice the salmon into bite-sized pieces and arrange on a plate.
Peel the orange with a knife and carve out wedges. Thinly slice orange wedges and arrange them around the salmon.
Pour the dressing over the salmon and oranges to coat. Garnish with fresh dill and top with thinly sliced birds eye chili.
Ingredients
1/2 pound sushi grade salmon, thinly sliced
1 birds eye chili, thinly sliced
1 orange
Handful of fresh dill
Juice of 1/2 a lime
4 tbsp olive oil
